In the Kitchen: Mini Spinach Mozzarella Pizza's
RECIPE AFTER THE JUMP! Do yourself a huuuuuge favor... make this =)
*Preheat oven to 400 degrees
Start with a homemade crust from this simple, no yeast recipe:
Each recipe yields one 8 inch pizza
1 cup flour
1/2 cup of water
2 tablespoons of olive oil
1 tablespoon of baking powder
1 tsp of salt
Mix dry ingredients, add in water (it will be REALLY sticky at this point), add more water if needed, add olive oil (now it will have a nice smooth consistency, no more sticky mess). Let rise for 45 to 60 minutes in a covered bowl at room temperature.
Mix sauce
1 small can of tomato paste
1 small can of tomato sauce
Dried oregano, garlic and basil to taste
Add toppings
Place pizza in oven for 12 - 15 minutes. It is important to pay attention to the pizza. The cheese should be browning and bubbling. A hot oven and quick baking time is how the gooey inside, crunchy outside of the dough is achieved.
The easy part is over, here is the last, and hardest step: waiting for it to cool! =)
Take out of the oven, cover on a heat protected surface, and let cool for at least 20 minutes
